This Week’s Food and Fitness

I’ve been eating the same thing all week for all 3 meals. Boring? Nope, delicious! Have a look:

Food Log 3-26-15

The recipe for the Taco Bake is HERE, and the BB (Black bean) Sriracha sauce is HERE. Instead of making it with the veggie pasta (like on the recipe link), I’ve just been eating it over brown rice or quinoa and then adding red peppers and scallions.

Oh, and that Pocketfuel Chocolate Espresso Almond Butter “gel” is fantastic! Of course it does contain 3 of my favorite things ;)

I haven’t yet determined if it actually helps with energy because my weekday runs are only 35 – 45 minutes, but it still makes for a delicious snack! Hahaha!

And speaking of running, here’s how this week has gone so far:

  • Monday: 3.5 mile easy/recovery run
  • Tuesday: for CT I did a 2.8 mile brisk walk
  • Wednesday: Speed work. I did 1:2 intervals x10 (3.69 miles)
  • Thursday: 35 minutes easy run (3.59 miles)
  • Friday: today is a 3 mile tempo run. Will probably do 4 between warm up and cool down, depending on how my tummy is in a couple hours when I go…

I’ve been wearing the Kinvara 5s all week. They’ve definitely moved to the #1 spot on my rotation list. And not only because I’m too lazy to switch the foot pod ;)  They are light-weight, comfy/springy, have great arch support, and are wide enough for my fat little feet (unfortunately, the NB Zantes are just a bit too narrow). They’ve worked well for hills, speed-work, and the long run.

Food and Fitness 3/10/15

Food Log 3-10-15

Today was cross-training day. I did a 1 mile warm-up walk followed by 20 minutes (1 mile) on the Arc Trainer. I hate that machine but it really is a good workout.

For dinner I made Spicy Baked Falafel burgers, and wow! They came out great! I’ll share the recipe tomorrow because I’m exhausted and going to bed now.

Food and Fitness 3/9/15

I think the time change caught up with me this morning. I couldn’t get out of bed and ended up being an hour late for work – oops. At least I missed the morning rush hour traffic ;)

I tracked everything I ate/drank today:

Today’s workout (Week 5 Day 1 of marathon training) was a 3.5 mile easy/recovery run. I also did the usual before and after work walks with Lucy, which was another mile.

And it was grocery shopping day. All stocked up on my normal, healthy stuff with only one snack – baked pretzel thins. I admit it was an impulse grab, but I did check the nutrition label before throwing them in the cart. 110 calories for 16 pretzels and less than 1g fat. They’ll be good for finishing off the last of the hummus.

For dinner tonight I made (a modified version of) THIS RECIPE – the Black Beans and Brown Rice Extravaganza, from the Engine 2 Diet. I left out the water chestnuts and avocado, but did add guacamole after it was all portioned out. I use the 100-calorie packs of Wholly Guacamole. LOVE that stuff! And the little portioned cups keep me from over-indulging.

I’m expecting the Fed Ex man tomorrow – a new outfit from Fabletics, and a pair of New Balance 890 v5. Yeah, yeah I know. I just can’t help myself ;)

Tuesday Tails

This never-ending winter is really starting to get to me. So much so that I don’t want to do anything but eat and sleep. At this point I even dread taking Lucy for her walks because if I’m not slipping and falling on the ice on my own, she’s so strong that any amount of tugging is enough to make me fall. Today when I lost my balance on the ice, she got off the leash and went running after a poodle. There was no way I could run after her so I just started yelling “she’s friendly!!” at the top of my lungs. Unfortunately the poodle wasn’t, but luckily his owner remained calm, and there wasn’t any incident.  I’m not sure how I’d feel about a 90 pound bully breed charging at me!

As for today’s food and fitness:

  • Breakfast: Muesli with walnuts and unsweetened vanilla almond milk
  • Lunch: Black Bean Sriracha Pasta
  • Dinner: Mexican no-meat Loaf with guacamole, salsa, corn, and Red Hot Blues (tortilla chips)

  • Workout: Today should have been cross-training, but I ended up leaving work early (snow/sleet AGAIN) so I didn’t go to the gym. After I got home, I jumped on the treadmill and ran 2 easy miles plus 1/2 mile warm/cool. And also walked 1 mile with Lucy, slip-sliding across the ice/snow.

Oops, I did it again!

It started with an innocent visit to Amazon.com so I could compare a couple of vegan protein powders. A few clicks here and a few clicks there, when all of a sudden I had an email confirming this purchase:

How does this keep happening?! Lol! Perhaps it’s time for an intervention? ;) In all seriousness though, they were $32.99 at 6pm.com. I really couldn’t justify NOT buying them! And I actually have tried these on before and almost bought them then. They were comfy and felt good on my feet. But in the end (that day) I ended up with another pair of Pure Flow 2s.


Today’s run was only going to be a super slow 1 miler because I definitely have that stomach virus going around. But by the time I finished the 1st mile, I wasn’t feeling all that terrible so I sped up a bit and kept going. I ended up having a pretty good run! Mile splits: 11:30, 10:06, 9:16, followed by a .25 cool-down.

However, by the time I got back to work I had chills and started feeling feverish, so maybe running wasn’t such a great idea. I’m probably going to stay home from work tomorrow and rest.


This morning’s weigh in was 116.8 and here’s what I ate today:

  • Brunch: Muesli with walnuts and unsweetened vanilla almond milk
  • Dinner: Black Bean Sriracha Pasta with roasted red peppers and salsa
  • Snack: Hot cocoa made with unsweetened vanilla almond milk

Because of this stomach virus I wasn’t even going to have dinner, but my tummy was growling when I got home. I hope I don’t regret this in a couple hours :(

Today’s run was 10k Trainer W8D2. 5 minute warm up, 28 minute run, 5 minute cool down. I slowed down a tad from yesterday because it was ungodly hot in the gym today and I was already sweating 15 minutes in. I wore my ST Racers again and had no foot or shoe issues – Yay!

This morning’s weigh in was 115.6 and here’s what I ate today:

  • Brunch: Dr. McDougalls Thai Peanut noodle soup
  • Dinner: Chipotle Black beans with Red Hot Blues and Minute brand Whole Grain Medley.

I was crazy busy at work today and skipped breakfast. Normally I eat quite a bit more than this. These past 3 days have been somewhat “off” – I kinda think I’ve got a touch of the stomach bug that’s been going around.

Meatless Monday – Chipotle Black Bean Wraps (and the usual other stuff)

I really can’t believe I hadn’t already posted this recipe because I eat it almost every day!

Chipotle Black Bean Wraps

Ingredients:

  • 1/4 cup Reduced Fat Vegenaise
  • 1 Tbsp Liquid Smoke
  • 1 tsp Chipotle chili powder (Spicy!)
  • 1/2 tsp Smoked Paprika
  • 1 can (15oz) black beans, drained and rinsed
  • 1 Tbsp lime juice
  • 1 tsp cumin
  • 1 bunch scallions (about 6) – both white and green parts, chopped
  • 1 jar (12oz) fire-roasted red peppers, chopped. Reserve about 2 Tbsp of the liquid
  • 4 whole wheat wraps
  • Cilantro for garnish (optional)

Directions:

  1. In a small bowl, make the Chipotle sauce by combining the Vegenaise, liquid smoke, Chipotle powder and paprika.
  2. In a medium sized mixing bowl mash the black beans with the lime juice and cumin. Add the Chipotle sauce.
  3. Add the scallions and roasted red peppers (and liquid) and mix it all together.
  4. Portion into 4 servings – 1 for each wrap. Wrap ’em up and garnish with cilantro. That’s it.

I also wanted to share that I had a great run today! I resumed my 10k Trainer program with Week 8 Day 1: 5 minute warm up, 28 minute run, and 5 minute cool down. I cranked up my “Long Run” playlist on Spotify and off I went (on the treadmill)…

Instead of running at the same pace for 28 minutes, I steadily increased the pace every 5 minutes. By the time I made it to the cool down, I was pouring buckets of sweat!

I also decided to stop worrying about my shoe dilemma. I do have 3 pairs that I like, plus the PF 2s that I pulled from the “retired” pile. I think I can get a few more miles out of them :) Here’s Lucy modeling with the current rotation:

Running, Reading, Ghosts, and Tomatoes

I don’t have much for today. It’s been non-stop raining/sleeting all day so I stayed in bed until 3pm listening to and finishing that book I started last night – Pines by Blake Crouch. I liked the first half better than the 2nd half, but it was one of those books that I couldn’t stop listening to!  I’d say it’s worthy of 4 stars, and I’ve already got the 2nd of the Trilogy (Wayward) downloaded and ready to go for tonight.

Today’s run was just an easy 5 miler, on the treadmill while watching Doctor Who. And since I couldn’t take Lucy out walking in the sleet, I added a 1.2 mile walk at the end of my run. I was going to do 10, but my tummy said no. I think I’ve pin-pointed the major culprit- tomatoes. I’m going to try a few days without tomatoes and see if it makes any difference.

  • Post-run: Skinny Girl Caramelized Onion pretzel crackers and some hummus
  • Dinner: Black bean Sriracha Pasta (+ roasted red peppers)

Yes, I know it’s not much but remember I didn’t even get out of bed until about 3pm! I’m sure I’ll be ravenous tomorrow ;)

Shoe Search Continues…

Let me get the whining right out of the way…

The shoes are no good. Yes, they fit perfect and are very comfortable. Until I ran in them. Instead of trying to explain what it is about them, let me just say that I’m back to searching for an everyday, light-weight, minimal yet cushion-y running shoe. In the meantime I’ll be trying to eek a few more miles out of my old PF2s, and alternating with the Newtons and the Ghosts.

I might be a wee bit OCD with running shoes.

Ahem, anyways… Today’s run was an easy 5k. Well, other than the shoes it was an “easy” 5k ;) I did the same intervals as yesterday, but upped the pace a little bit to finish in under 30 minutes.

Tomorrow I’m going to slow it down and shoot for 10 miles. Instead of listening to music, I’m either going to finish up season 7 of Doctor Who or listen to an audio book.

I joined Kindle Unlimited on Amazon last night, and the book I started listening to (Pines by Blake Crouch) is really good so far! I was trying to read (listen to) Odd Thomas, but it’s so slow-going that it puts me to sleep. Definitely not the case with Pines!

  • Breakfast: 2 Tbsp peanut butter
  • Lunch: Chipotle Black beans w/roasted red peppers and scallions, Minute brand Whole Grain Medley, and Red Hot Blues (yes, I eat this almost every day)
  • Dinner: Whole wheat sandwich thin with lettuce, tomato, onion, and a Nature’s Promise Chipotle Black Bean veggie burger, homemade potato wedges (recipe HERE) and BBQ sauce.

They Fit!

I couldn’t wait to get home from work today and try on the new, new PF2s and THEY FIT! Yay! They feel perfect on my feet (just like the adult-sized PF2s), so I’m hoping they aren’t any different (I couldn’t tell with the other new pair since they’re too big). I’ll report back on that after tomorrow’s run. And then I will buy EVERY pair they have in stock ;)

Today’s run was an easy 3.5 miles. I did the intervals from Week 3 of the 5k/10k programs: 5 minute warm-up (I did 7 minutes because I started warming up before deciding on which intervals I wanted to do today), then 2 repeats of: run 90 seconds, jog 90 seconds, run 3 minutes, jog 3 minutes. Followed by a 5 minute cool-down. And I added a few extra minutes at the end to hit 3.5 miles.

I wore my old Skechers GoRun 2s today, and now I have nice big blister on the top of the 2nd toe on my left foot. Now I remember why I stopped wearing them. Oops!
