Meatless Monday – Chipotle Black Bean Wraps (and the usual other stuff)

I really can’t believe I hadn’t already posted this recipe because I eat it almost every day!

Chipotle Black Bean Wraps

Ingredients:

  • 1/4 cup Reduced Fat Vegenaise
  • 1 Tbsp Liquid Smoke
  • 1 tsp Chipotle chili powder (Spicy!)
  • 1/2 tsp Smoked Paprika
  • 1 can (15oz) black beans, drained and rinsed
  • 1 Tbsp lime juice
  • 1 tsp cumin
  • 1 bunch scallions (about 6) – both white and green parts, chopped
  • 1 jar (12oz) fire-roasted red peppers, chopped. Reserve about 2 Tbsp of the liquid
  • 4 whole wheat wraps
  • Cilantro for garnish (optional)

Directions:

  1. In a small bowl, make the Chipotle sauce by combining the Vegenaise, liquid smoke, Chipotle powder and paprika.
  2. In a medium sized mixing bowl mash the black beans with the lime juice and cumin. Add the Chipotle sauce.
  3. Add the scallions and roasted red peppers (and liquid) and mix it all together.
  4. Portion into 4 servings – 1 for each wrap. Wrap ’em up and garnish with cilantro. That’s it.

I also wanted to share that I had a great run today! I resumed my 10k Trainer program with Week 8 Day 1: 5 minute warm up, 28 minute run, and 5 minute cool down. I cranked up my “Long Run” playlist on Spotify and off I went (on the treadmill)…

Instead of running at the same pace for 28 minutes, I steadily increased the pace every 5 minutes. By the time I made it to the cool down, I was pouring buckets of sweat!

I also decided to stop worrying about my shoe dilemma. I do have 3 pairs that I like, plus the PF 2s that I pulled from the “retired” pile. I think I can get a few more miles out of them :) Here’s Lucy modeling with the current rotation:

This morning’s weigh in was 115.8 and here’s what I ate today:

  • Brunch: Black Bean Sriracha Pasta with roasted red peppers and salsa
  • Dinner: Chipotle Black Bean Wrap with Minute brand Whole Grain Medley

2014 Mileage Total (Day 6 #writeandrun31)

I got an email from DailyMile this morning that had my total mileage for 2014. There were a few months where I was either sick or injured, but overall it was a good year!

I think this total also includes walking though, because my 2014 total running mileage was more like 900-something miles. So for 2015 I’m only logging running miles onto dailymile, and my goal is 1200+ miles (100/month).


I went into work late today because it’s been snowing, and I HATE driving in the snow/ice. To be honest, the only reason I went in at all is because I keep my gym bag (with my Garmin and my current rotation of running shoes) at my desk during the week! So basically, I risked my life so I wouldn’t miss my run! Haha!

I did Week 7, Day 2 of 10k trainer, which was pretty much a repeat of yesterday. 5 minute warm up, 25 minute run, and 5 minute cool down.

I ran 3.5 miles in just under 35 minutes (again ;)). And 4 seconds faster than yesterday!

Today’s food was Dr. McDougall’s Thai Peanut noodle soup, 5 Reese’s minis, leftover Pueblo Pie, and a huge salad.  And weigh in this morning was 115.4

And in other exciting news, my Garmin FR15 was shipped out today and should be here by the weekend! Woohoo!

Oh I almost forgot I have a blog here, sorry ;)

Of course I’m still running! I’m currently on Day 19 of the Runner’s World Run Streak (#rwrunstreak). It started on Thanksgiving and goes through New Years Day. I’m also redoing the 10k trainer (by Zen Labs) to work on speed, and it’s been helping!

Running week of 12-7-14

I got some new running shoes – Newton Fate. So far I really like them! The lugs aren’t as pronounced as on my previous pair of Newtons (Distance U), which makes them much better for doing intervals. I wanted to get a couple more pairs of my beloved Pure Flow 2s, but I can’t find them in my size anywhere :(

I also got the new Polar M400 GPS watch. It’s got a built in activity tracker and beeps to remind me to get up and move. I haven’t used the GPS on it yet since I’ve been doing all my running on the treadmill. And unfortunately, the M400 is not foot-pod capable yet, although that is supposed to be updated shortly. So I’m still using my Garmin as well. I’m thinking that I kinda jumped the gun on ordering it, but (hopefully) once I can use the foot pod with it, it will become my all-in-one fitness gadget!

Oh, and it looks like marathon training will begin again in February! I’m hoping that having my virtual running buddy, Tammy, training along with me, will get me over that hump where I chicken out and give up! And the marathons we have picked are on the same weekend in June!  I’ve already got a rough draft of our training plan, which is a conglomeration of 3 different plans (Galloway, NMA, & RW Smart Coach), with some of my own tweaking added in. I’ll share it once I have it finalized.
